However, I only ...I made this recipe this morning. However, I only had about 1 oz of candied ginger which I did add. I also added 3 schoolboy sized granny smith apples, cut in half and seeded for the natural pectin. I removed the apples when the jam was ready to jar. I used all vanilla paste (didn't have any extract :)). It's heavenly and I can hardly wait to make scones this winter and find summer in the jars! Perhaps hazelnut scones! We have a massive pear tree that gets loaded with pears in summer (soon to come) and even though the birds do their best to eat their bodyweights full, they can't manage to eat them all. I usually get the poor long suffering husband to climb up and pick as many as he can to make wine with, but this year, we are going to make jam! This delicious jam promises to warm you up in the middle of winter when you are wondering if it is EVER going to get warm again with the lovely addition of ginger. Cheers for sharing. I remember when the kids used to go back to school after the long holidays and it was always so quiet and I always had to adjust to a new pace as well. Now its ME thats a student and I love Love LOVE the holidays! I hate having to get back to the books and spend every waking hour out on Serendipity Farm trying to hack the wilderness back and get a bit of an exclusion zone going around the perimeter of the house so that the natives don't get restless on our butts!
