I just got one for slicing things uniformly for dehydrating since most mandolins wouldn't give me a thick enough apple slice :) It's working out great this summer for pickles, too. They are called candied since their canning...Cathy,<br />They are called candied since their canning juice is mostly sugar, and "gelatinizes" if you will the jalapeno pepper. The peppers are still hot, but they are very sweet, thus candied!
